Easy One Pot Salmon & Asparagus Dinner

Happy Food Frenzy Friday!  Since Julie has been sharing with you all of her amazing creations she is selling in her Etsy store Beautifully Broken Creations, I want to keep sharing with you some super yummy recipes!
 
I'm always scanning Pinterest for a delicious, yet easy recipe since it has become harder to even make dinner with a toddler and baby! This recipe takes the cake on easy bar none!
 
 
It's the One Pot Wonder Blackberry Glazed Salmon and Asparagus.  Yes, it's a mouth-full of a title, but it's mouth-watering to taste!  The beauty of this recipe is that it can be done in 20 minutes!
 
I know, I know...I was skeptical too! Recipes always say they can be done in 20 minutes, but that's not considering ALL the prep time.  This one; however, is for real!
 
Here is what you will need:
- 4 6-ounce skinless salmon fillet (I made 5 this night and added a little bit more of each ingredient).
I buy the individually wrapped ones from Costco. They come frozen, so I stick them in hot water for about 15 minutes and wha-la...ready to cook!
- 1 pound of asparagus. I buy the Green Giant already packaged ones and rinse them before using
- 1 cup of low sodium vegetable or chicken broth
- 1/4 cup of blackberry jam (I didn't have blackberry, so I used apricot and it was AMAZING!)
- 1 tbsp. olive oil
- 1 tbsp. red wine vinegar
- 1tsp each of paprika & cumin
- 1/4 tsp of salt
 
Here is what to do...

 
First, pour the broth into a the pot and bring it to a simmer. While waiting for that to simmer, prepare your salmon fillets by seasoning them with salt and pepper. Once it begins to simmer, lay asparagus out over the broth and salmon fillets over the asparagus.  Cover and let it continue to simmer for 8 minutes, exactly...don't want to over-cook the salmon.
 
While that is cooking, mix together the jam, olive oil, vinegar, paprika, cumin and salt.

 
Once the 8 minutes are up this is what it will look like.

 
Take your jam mixture and spread it all over the salmon. The salmon will be hot, so be careful!  See the steam in the picture above?....is your mouth watering yet?

 
Re-cover your pan and stick it into the broiler for 2 minutes or until you see the glaze start to bubble.
 
And that's it!  You're done!!!  SUPER easy and so, so delicious!
