Graduation Celebration!

I know I promised the 2nd part of my workshop post for today, but I wanted to share something that is MORE important! 
This weekend we were able to see our oldest son (Tim) graduate from Regis University with a Bachelors of Science degree in Accounting, so I wanted to share some pictures and thoughts on this accomplishment. 
First of all, we couldn't be more proud of this accomplishment and the mere fact that he did it in 4 years...way to go Timothy! Second, I can't believe that I am old enough to have a child that has graduated from college and third, this boy worked very hard and deserved to be surrounded and celebrated by family! 

I am so thankful that both sets of grandparents were able to witness this and that Madi was able to be there from San Diego; celebrations just wouldn't be complete without family. 
We had an eventful weekend and are tired from all of the excitement, but we wouldn't have it any other way.

As parents there are times in your child's life that make you proud and this moment is one of them...the dedication it takes to go to college and graduate (in 4 years) is a GREAT accomplishment! 

Timothy Michael we are so very proud of you and can't wait to see what 'He' holds in your future (and Kate's too)! Continue to follow Him and you will have a BRIGHT future! But for now...celebrate and enjoy this accomplishment! We love you to the moon and back!

Slim Greek Quinoa Dish (9 WW Points)

Food Frenzy Friday is here and I want to share with you my new favorite dish!!  Best part is that it's Weight Watcher friendly!
 
I know a lot of these quinoa and avocado dishes are going around on Pinterest, but I have broken this one down for you in case you are watching what you eat!
 
 
Here is the breakdown of ingredients to make it Weight Watcher friendly:
 
1 Cup Quinoa (5 WW Points)
1/4 Avocado (2 WW Points)
1/4 Cup Low Fat Feta Cheese (2 WW Points)
1/2 tbsp. Light Balsamic Vinaigrette Dressing (no points - Free!) ~ I use Paul Newman's
Cucumbers (no points - Free!)
Tomatoes (no points - Free!)
 
This dish is so yummy and with avocados in season, how can you not love it?!
